Breakfasts

(Around 250kcals each)

  • Florida citrus salad with yoghurt (V)

Segment ½ pink grapefruit and 1 orange, serve with 1 small pot fat free natural yoghurt 1tsp chopped nuts and a sprinkle of ginger

  • Banana Sandwich (V)

2 slices wholegrain bread filled with 1 mashed banana with a sprinkle of cinnamon

  • Cream cheese and blueberry Bagel (V)

1 toasted wholemeal bagel thin filled with 1tbsp low fat cream cheese and1 handful blueberries.

  • Apple Nutty Crumble pot (V)

Chop and stew 1 eating apple, until softened but with some texture, leave to cool then layer with 1 small pot fat-free Greek Yoghurt in a glass dish. Top with 1tbsp toasted oats and 2tsp chopped nuts

  • The Big Breakfast

2 Grilled rashers lean back bacon, 1 poached egg1 grilled tomato and 1 large Portobello mushroom fried in a little spray oil.

  • Scrambled eggsand Spinach on toast (V)

Fry ½ small onion and garlic in a little spray oil until soft, Add 2 handfuls (4 cubes) of frozen spinach (defrosted and excess water squeezed out) and cook until all water has evaporated, Mix in 2 beaten eggs and scramble until cooked, Serve on 1 slice wholemeal toast.

  • Apricot and Cinnamon muesli (V)

Mix 2 tbsp toasted oats with 2 tbsp Branflakes 3 chopped dried apricots 1tsp chopped nuts, a pinch of cinnamon and serve with milk.

  • Summer berries with nuts and oat vanilla cream (V)

Beat 3 tbsp of quark with 3tbso low fat natural yoghurt and 2tbsp toasted oats, 1 tbsp chopped nuts, and a dash of vanilla extract to taste, serve the cream with 3 handfuls fresh (or frozen and defrosted) summer berries.

  • Avocado and poached egg on toast (V)

1 slice wholemeal toast topped with ½ a small mashed avocado and topped with 1 poached egg.

  • Banana Branflakes (V)
